Brennmaischhefe is the German term for yeasts used in the fermentation process for the distillation of alcohol, especially in the production of spirits such as brandy, whiskey and vodka. These are special strains of yeasts selected for their ability to convert sugars into ethyl alcohol and for their resistance to high alcohol concentrations and other difficult fermentation conditions.
