Parmigiano Reggiano Vacche Rosse, aged up to 30 months, is a fine variation of this famous Italian cheese. It is extracted from the milk of traditional red cows and has an intense, complex and slightly spicy taste. The long maturation gives it a grainy texture and rich flavour, making it ideal for grating over dishes such as pasta or for pure enjoyment. Tasting: remove from the fridge 30 minutes before eating. With good olive oil from Tuscany, radicchio or dried tomatoes, pecorino is a fine snack or irresistible addition to a glass of chianti. Storage: wrap cheese in tight film, wrap well in paper or foil with air holes and place in a non-airtight tin in the fridge in the vegetable compartment.
