To cook in a stainless steel wok without the food sticking, follow these simple and effective steps: ️ Preheat the wok properly: Place the wok empty on medium heat for 1-2 minutes. Test the temperature by pouring a drop of water: if it forms a sliding ball (Leidenfrost effect), the wok is ready. Avoid overheating so as not to damage the stainless steel. ️ ADD FAT: Once the wok is hot, pour a thin layer of oil (olive, sunflower oil or clarified butter) and let it heat slightly until it starts to simmer.
