Supertex 3 is a modified tapioca starch with high performance cold water bulge. It provides a very smooth, shiny and short texture in a range of instant applications, but also tolerates the pasteurization process. Its tapioca base provides a very bland aroma profile with good blending characteristics. Supertex 3 is suitable for refrigerated and frozen applications. Supertex 3 is recommended everywhere due to the characteristics of functional starch even without cold cooking.
