It provides a very smooth, shiny and short texture in a range of instant applications, but also tolerates the pasteurization process. Its tapioca base provides a very bland aroma profile with good blending characteristics. ULTRATEX 3 is suitable for refrigerated and frozen applications. ULTRATEX 3 is recommended everywhere due to the characteristics of functional starch even without cooking with cold use.
