From the leaves of lemongrass, only the tender part located at the base of them are used in cooking. They are usually eaten chopped, fresh or dried. Hard and not pleasant to chew, it is usually used in infusion, marinade and removed from dishes before consumption. Lemongrass is very present in all Asian cuisines, especially Thai, Vietnamese and Indonesian dishes where it is wonderfully combined with ginger, coconut milk, garlic or hot peppers. "Sometimes used with white meats, it is especially with fish and seafood that it gives its full potential! It's just great as a marinade spicy with shrimp, or paired with fennel with white fish."
