Over a century of tradition - The San Simone cheese dairy can look back on over 120 years of experience in the production of Parmigiano Reggiano - with passion and craftsmanship passed down over three generations. A centuries-old tradition reflected today in a cheese of the highest quality - rich in history, maturity and care. Quality control - As early as the 1950s, a separate hutch for partial milk production was set up - a strategic decision that allowed direct and constant control over the raw material and thus guaranteed a consistently high product quality. Extreme maturation and pronounced character - The 48-month aged Parmigiano Reggiano impresses with a particularly intense and complex aroma profile: spicy notes, dried fruits, concentrated broth and matured wood characterise its taste. The texture is friable and rich in tyrosine crystals - a typical feature of exceptionally long maturation. A strong, persistent taste - ideal for true cheese lovers. Versatility in the kitchen - Perfect for pure enjoyment with a few drops of traditional balsamic vinegar, honey or dried fruit. Also excellent as a noble ingredient for finishing gourmet dishes, refined pasta creations or recipes that demand depth and character.
