De Buyer Pans contain a high carbon content. This allows the pans to last a lifetime, provided you take good care of them. Like all de Buyer pans, the pan must first be burned in. Read below how best to do this. Before using a de Buyer steel pan you must first burn it to create a non-stick layer. To burn in the pan you need a type of oil, however olive oil does not work well, it cannot handle high temperatures. Put the pan on the stove and heat it on low heat. Pour a generous layer of oil into the pan and let it heat for 5 minutes.
