Its biscuit like, mild sweetness leaves striking notes of shortcrust pastry with hints of salt. With intense aromas, Dulcey goes particularly well with caramel, coffee and hazelnuts as well as too little acidic yellow fruits such as mango, banana and apricot. The basic idea for this new chocolate family was created by a happy coincidence. Frederic Bau, from the Ecole du Grand Chocolat Valrhona, had simply forgotten white Ivoire chocolate in the Bain-Marie. After years of further development, Dulcey can now find a unique product with very unusual features into the world of patisserie.
