Bring the water to a boil (100°C) and leave a filter to infuse for at least 2 minutes. Stir, wring out the filter and remove it STEPHEN TWINING TIPS: Use fresh water; for green teas, after boiling, the water should be cooled for a few minutes to reach the optimum temperature. The teapot must be made of porcelain or ceramic, never metal to not alter the taste of the tea.
