After cooking, the product is cooled and carefully peeled by hand and the individual parts removed completely. The cleaned slices are also cut into fillets and filled into pots and jars. After this phase, the containers are filled with olive oil. Sebastiano Drago fillets are great as they are flat, for salads or for preparing many other recipes.
