Fresh daily production at our Raspada Dairy It has a delicate, slightly sour and salty flavour with notes of fresh milk. The stracchino is very versatile in the kitchen. Can be enjoyed alone, spread on bread, or used to fill sandwiches, sandwiches and pies. It is also an essential ingredient for the preparation of numerous dishes, such as risottos, pastas and first courses. It is produced with whole and pasteurized cow's milk, through a process of coagulation of milk with rennet. The curd is then processed and put into shapes, where it ripens for a few days. Its origins date back to the Middle Ages, when shepherds descending from the Alps with their flock made this cheese using freshly milked milk. The name "stracchino" comes from the Lombard dialect and means "tired", precisely because it was made from the milk of the "tired" cows from the trip.
