Pepper can rightly be considered the King of Spices. In the history of the Middle Ages it was so precious that it represented the exchange currency in multiple negotiations, like gold. Hence the name of Gold of the East. Pepper receives its spiciness almost completely from piperine, a substance found in both pulp and seed. Refined piperine is about one percent spicy compared to capsaicin contained in chili peppers. Pepper loses its flavor when exposed to light due to piperine transformation. No glutamates, thickeners, dyes or other chemicals. Store this product in a cool, dry place away from heat to maintain its organoleptic properties for a long time. Packaged in the new pot, anti-light and anti-oxidation.
