Carnaroli Risotto Rice The rice is of the Carnaroli variety, considered the "king of risotto", and offers an excellent consistency and ability to absorb flavors, making it the ideal rice for a perfect risotto. COMPLETE PRODUCTION CHAIN The Acquerello Carnaroli Risotto Rice is grown, processed and packaged on the Colombara estate in Italy, ensuring its quality and authenticity. Meticulous Processing - The rice goes through 20 carefully checked processing steps, including bleaching with a propeller - recognized as the most effective method of treating rice grains. The raw rice is stored in silos at temperatures below 15°C for at least one year to stabilise the starch and increase the absorption capacity of spices and flavors. A small proportion of our cultivation is even stored for up to 7 years to create a particularly exquisite product for demanding kitchens. Reintegration of the germ: through an internationally legally protected patent, the germ is reinserted into the rice grain, making the rice more nutritious and healthier.
