Matcha literally means "tea powder" in Japanese. Matcha is a green tea from Japan, obtained from powdered leaves, tencha ("grinding tea" in Japanese), a variety of tea. This tea is consumed in the land of the Rising Sun during the traditional tea ceremony, Cha No Yu. Its unique color and taste also make it a popular powder in cooking and baking. Unlike other teas, matcha is not infused but whipped. We consume the whole leaf reduced to powder, added to water or in a culinary preparation (cake, yogurt, smoothie...). To prepare a bowl of matcha tea, put about 1 g of matcha powder in 80 ml of water heated to 75 ° C. Then, beat the whole with a bamboo whisk, forming a W, until a thin foam appears on the surface, which takes between 30 seconds and one minute. The leaves of tencha tea are harvested by hand.
