Origin and Features: Jhannu Organic Oolong Tea takes its name from the highest mountain visible from the plantations of Pativara in Nepal. It is made from Assam leaves and follows the process of making darjeeling teas to create different degrees of fermentation. Fermentation Process: The tea undergoes a slight twisting followed by a first fermentation of 2-3 hours, a second twist with another 2-3 hours of fermentation, and a final twist before thermal fixation to maximize the intensity of taste and freshness. Traditional Preparation Method (Gong Fu Cha): Use 5g of leaves in a 100ml gaiwan. Rinse the leaves in water at 100°C and make a first infusion for 5 seconds, increasing the time to 10 seconds with each subsequent infusion. This method allows up to 7 infusions. Classic (Western) Preparation Method: Use 3 g of leaves in a 150 ml cup with water at 100 °C and a brewing time of one and a half minutes. The tea can be filtered and the brewing times can be adjusted as desired. Storage: Store the tea in a cool, dry place away from direct sunlight to maintain its aromatic and taste qualities.
