It is often confused with conventional cinnamon, since both trees belong to the same genus Cinnamomum, framed in the laurel family. The bark of cassia is thicker. The smell of this cinnamon is more intense but less fragrant, and its taste, more spicy and with an astringent point. Widely used in dishes such as Pilaf, lamb and meat dishes in general.
