This oil confirms the existence of previously unknown flavors and sensory experiences. ♂️ Only during the month of October, the harvesting and grinding of this variety of olives is carried out, being the earliest harvest of all. Sourced from altitude olive groves in the Knijo estate, it has become one of the most awarded oils in Melgarejo. Aroma: The aroma of Melgarejo Picual is quite intense and very "green". These notes are usually described: freshly cut grass, olive leaf, green tomato and green spices. Flavor: It has a green fruity inlet, quite intensity, medium-high bitterness, and progressive spicy at the end. The green tomato, the olive leaf and a slightly almond touch is noticeable. It has that typical Picual character "powerful" of Jaén. Pairing: It goes very well with intense flavors and strong cuisine: red meats and ribeye, toast with tomato, Iberian ham, cured cheeses, grilled vegetables, gazpacho and salmorejo, legumes, and dishes with garlic or spices.
