Only the best durum wheat semolina of first extraction, 100% Italian, only the heart of wheat grain, combined with the water of the ancient source of Gragnano and processed with traditional bronze wire drawing is used. This unique paste is complemented by slow and gentle drying at low temperature, which gives it its characteristic flavor, colour and roughness of the surface. Thanks to these characteristics, in 2012 "la fabbrica della pasta di Gragnano" was the first pasta producer in Italy to obtain the recognition of the protected geographical indication "Pasta di Gragnano PGI".
