This Riso Vialone Nano comes from the small village of Isola della Scala (south of Verona and north of the River Po), which is very famous for rice cultivation. The fields on which it is grown are managed with a changing crop rotation. This allows the soil to recover and gives the rice plant enough nutrients for a healthy grain. The Ferron family still uses a water-driven mill from the 17th century (pestelli) that peels and minimally polishes the untreated rice after drying. The fields are watered with spring water and now and then carp are used in the flooded fields for weed killing. The round, white-grey rice grains absorb a lot of taste and cooking liquid, are rich in nutrients and very protein. The rice is tasteful with a nutty accent. It is unsurpassed for risottos; the round-grain rice combines intimately with the ingredients, but remains pungent and bite-resistant. It is slightly more round grained than the carnaroli.
