Organic sugar with a good balance of sucrose and fructose, does not contain glucose. Used by sybaritas in the kitchen and in desserts. The palm sugar tree is widely present in Cambodia. Farmers climb to the top of the trees, cut the root that holds the fruit, and tie a bamboo container that will collect the sap overnight. The next morning it is collected and taken to large pots where they are to be cooked until it becomes thicker. After it is kneaded with wooden sticks until it is solid. The taste of palm sugar resembles that of cane brown sugar, but with notes of caramel or buttered sugar caramel. Unlike cane brown sugar, it has a rich taste, low melting temperature and high burning temperature. This makes it a great choice for use in confectionery products. In most cases palm sugar can be used in the same way and in the same amounts as traditional white sugar. With a very low glycemic level (below 30), it makes this sugar much healthier than others. Substances present in this sugar and beneficial for health are (among others): potassium, magnesium, vitamin C and amino acids, such as glutamine and arginine.
