Capers are flower buds: they have a round shape, a compact and crisp consistency, a slightly bitter taste with a delicate tart note. The fruits, on the other hand, are larger, elongated and leathery egg-shaped berries, so-called cucunci. The production area is located on the island of Salina in the province of Messina. The fields are between 100 and 350 meters above sea level. The plants are propagated by cuttings outdoors and pruned once a year between January and February. Capers are usually grown in conjunction with other fruit trees: vines, olive trees, figs and almond trees. To curb the development of weeds and limit the evaporation of water from the soil, the soil is manually processed on the surface. The harvest is done manually and scalar. The manually selected cucunci are pickled for about 90 days and marketed in salt, vinegar and extra virgin olive oil. This process takes at least one and a half months for the colour to change from light to dark green. Recommended use: Before using in the kitchen, it is recommended to rinse them and soak for half an hour to make to to make to to change the water.
