Maturation in wood 50ml The specialty of a centuries-old tradition unique in the world. Now known in the excellence of Italian gastronomy, Cetara anchovies is a liquid obtained from the process of maturation and maturation of anchovies pressed in salt, following an ancient process handed down from father to son by the fishermen of Cetara. The anchovies, after having fished and unviscerated, are placed in an oak container, the third of a barrel, arranged with the classic 'head-tail' technique in alternating layers of salt and anchovies. After the layers, the container is covered with a wooden disc (called tompagno), on which are placed weights (sea stones). The liquid, due to the pressing and maturation of the anchovies, begins to emerge on the surface; it is a clear distillate with a rich amber colour, with a strong and full-bodied taste. Casting has been a great success over the last ten years, such as to gastronomically characterize the small fishing village of the Amalfi Coast. Today, this typical and genuine seasoning of the local gastronomy has been awarded the DOP brand and continues to be the flagship of our production.
