Borettane Onions in Extra Virgin Olive Oil from Frantoio di Sant'Agata d'Oneglia are harvested between the end of July and November and kept fresh in oil. They can be eaten raw as crunchy bites to accompany second courses or appetizers as they are characterized by a sweeter and more delicate taste than common onions. Borettane onions are excellent sweet and sour, cooked in a pan with balsamic vinegar as per the Emilian tradition.
