ORGANIC CARDAMOM SEEDS | Aromatic whole seeds of ORGANIC quality (controlled cultivation), dried in their natural form, packaged without additives in protective, resealable Biojoy bags. WHY? | The essential oils of this exotic spice - a classic for Christmas cookies and Arabic-Oriental specialities - are best preserved in the whole seed capsules. HOW? | You can use the seeds whole, coarsely crush them in a mortar or finely grind them. Grind the desired amount just before use and season sparingly, because the aroma is intense. OUR TIP | For 2 large cups of tea, bring 300 ml of water to the boil in a saucepan. Add 2 tsp Assam or Darjeeling tea and 4-6 seeds, depending on the desired cardamom flavour, to the boiling water and simmer over low heat for 5 to 7 minutes. Add 100 ml milk (1.5% fat) and heat the tea until just before boiling point. If desired, add 1-2 tsp sugar and stir until the crystals dissolve. Pour the tea through a strainer into 2 mugs and enjoy warm in small sips.
